Shirred Eggs With Parmesan

Shirred eggs are a simple, yet elegant dish that can be enjoyed any time of day. They are made by whisking eggs and then baking them in a ramekin or baking dish.


Units Scale

4 eggs

3 tbsp green onions

1 leek white and light green minced

1 bell pepper sliced

6 tbsp cream

2 oz parmesan grated

1 tsp salt and pepper

3 tbsp butter


  1. Preheat oven to 375 degrees f.
  2. In small pan melt butter add bell pepper, leek and onions.
  3. Cook until peppers are tender.
  4. Remove from heat.
  5. Set 4 buttered ramekins on baking sheet and divide bell pepper mixture evenly.
  6. Between the dishes making a small hole in each of the eggs.
  7. Carefully crack eggs into hole.
  8. Top each egg with cream, salt, pepper and cheese.
  9. Bake for 15 minutes
  10. Serve warm with bread.


The result is a fluffy, creamy egg that is infused with flavor from the Parmesan cheese. Shirred eggs are the perfect meal for any time of day.
