Ingredients
4 eggs
3 tbsp green onions
1 leek white and light green minced
1 bell pepper sliced
6 tbsp cream
2 oz parmesan grated
1 tsp salt and pepper
3 tbsp butter
Instructions
- Preheat oven to 375 degrees f.
- In small pan melt butter add bell pepper, leek and onions.
- Cook until peppers are tender.
- Remove from heat.
- Set 4 buttered ramekins on baking sheet and divide bell pepper mixture evenly.
- Between the dishes making a small hole in each of the eggs.
- Carefully crack eggs into hole.
- Top each egg with cream, salt, pepper and cheese.
- Bake for 15 minutes
- Serve warm with bread.
