Notes

  1. Don’t overcook the chicken: Chicken can quickly become tough and dry if overcooked. Be sure to cook the chicken just until it’s no longer pink inside and still moist and tender.
  2. Use the right amount of spices: Curry dishes rely on a complex blend of spices to achieve their signature flavor. Be sure to measure your spices carefully and adjust the amounts to your taste.
  3. Don’t let the chickpeas turn to mush: Chickpeas, like lentils, can become mushy if overcooked. Keep an eye on them and test them for doneness periodically. They should be tender but still hold their shape.
  4. Balance the flavors: Curry chicken with chickpeas is a rich and flavorful dish, but it’s important to balance the flavors so they don’t become overwhelming. Consider adding a squeeze of lemon or lime juice or a dollop of yogurt to help balance the flavors.
  5. Adjust the heat level: Curry dishes can vary in heat level depending on the type and amount of spices used. Adjust the heat level to your preference, and if it’s too spicy, try adding a little bit of sugar or honey to balance it out.
  6. Be mindful of cross-contamination: Chicken can harbor harmful bacteria, so it’s important to handle it carefully to avoid cross-contamination. Always wash your hands and cutting boards thoroughly after handling raw chicken, and avoid using the same utensils or surfaces for raw and cooked chicken.
