Description

This is the popular pasta recipe shared by supermodel Gigi Hadid. It’s a creamy, savory dish with a touch of heat from red pepper flakes and a hint of tanginess from vodka. This pasta is a crowd-pleaser and perfect for a comforting dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1/3 cup vodka
  • 1 cup heavy cream
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • 1 pound pasta (your choice, shell pasta works great)
  • 1 cup Parmesan cheese, freshly grated


Instructions

  1. Start boiling water in your pot for the pasta. Cook the pasta according to the package instructions until it’s al dente.
  2. While your pasta is cooking, heat the olive oil in a large pan over medium heat.
  3. Add the onion and garlic to the pan. Sauté until the onion becomes translucent, about 5 minutes.
  4. Stir in the tomato paste, and cook for another minute.
  5. Add the vodka to the pan, stirring well to combine. Let it simmer for about 7-10 minutes until the alcohol cooks off.
  6. Lower the heat and stir in the heavy cream, red pepper flakes, salt, and pepper. Let the sauce simmer for another minute.
  7. Once your pasta is cooked, drain it, reserving some of the pasta water.
  8. Add the drained pasta to the sauce, tossing well to combine. If the sauce is too thick, add a bit of the reserved pasta water.
  9. Remove the pan from the heat, and stir in the grated Parmesan cheese.
  10. Serve hot, garnished with additional Parmesan cheese and a sprinkle of red pepper flakes if desired.

Notes

Freshly grated Parmesan cheese will melt more smoothly than pre-grated cheese.

Be careful not to overcook your pasta; remember, it will continue to cook a bit more in the hot sauce.

Obviously you can make without vodka should you wish.
