Description
This is the popular pasta recipe shared by supermodel Gigi Hadid. It’s a creamy, savory dish with a touch of heat from red pepper flakes and a hint of tanginess from vodka. This pasta is a crowd-pleaser and perfect for a comforting dinner.

- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 1/3 cup vodka
- 1 cup heavy cream
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
- 1 pound pasta (your choice, shell pasta works great)
- 1 cup Parmesan cheese, freshly grated
Instructions
- Start boiling water in your pot for the pasta. Cook the pasta according to the package instructions until it’s al dente.
- While your pasta is cooking, heat the olive oil in a large pan over medium heat.
- Add the onion and garlic to the pan. Sauté until the onion becomes translucent, about 5 minutes.
- Stir in the tomato paste, and cook for another minute.
- Add the vodka to the pan, stirring well to combine. Let it simmer for about 7-10 minutes until the alcohol cooks off.
- Lower the heat and stir in the heavy cream, red pepper flakes, salt, and pepper. Let the sauce simmer for another minute.
- Once your pasta is cooked, drain it, reserving some of the pasta water.
- Add the drained pasta to the sauce, tossing well to combine. If the sauce is too thick, add a bit of the reserved pasta water.
- Remove the pan from the heat, and stir in the grated Parmesan cheese.
- Serve hot, garnished with additional Parmesan cheese and a sprinkle of red pepper flakes if desired.
Notes
Freshly grated Parmesan cheese will melt more smoothly than pre-grated cheese.
Be careful not to overcook your pasta; remember, it will continue to cook a bit more in the hot sauce.
Obviously you can make without vodka should you wish.
