Description

These strawberry tarts are made with a buttery crust and filled with creamy vanilla custard and fresh strawberries. They are sweet, tangy, and delicious.


Ingredients

1 1/2 cups all-purpose flour

– 1/2 cup unsalted butter, chilled and cubed

– 1/4 cup granulated sugar

– 1 egg yolk

– 1/4 cup milk

– 1/2 cup heavy cream

– 1/2 cup granulated sugar

– 2 egg yolks

– 1 teaspoon vanilla extract

– 1 pint fresh strawberries, hulled and sliced


Instructions

 In a large mixing bowl, combine the flour, butter, and sugar. Mix until the mixture resembles coarse crumbs.

  1. Add the egg yolk and milk and mix until the dough comes together.
  2. Roll out the dough on a floured surface and cut out circles to fit into a muffin tin.
  3. Bake the crusts in a preheated oven at 375°F for 10-12 minutes or until golden brown.
  4. In a saucepan, heat the heavy cream and sugar until the sugar dissolves.
  5. In a separate bowl, whisk the egg yolks and vanilla extract together.
  6. Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
  7. Pour the custard mixture into the baked crusts and top with sliced strawberries.
  8. Chill the tarts in the refrigerator for at least 1 hour before serving.

Notes

Make sure the butter is chilled before mixing it with the flour and sugar.

– Use a muffin tin to make the crusts uniform in size.

– Be careful not to overbake the crusts, as they can become too hard.

– Chill the custard mixture before pouring it into the crusts to prevent the crusts from becoming soggy.
