Description
These strawberry tarts are made with a buttery crust and filled with creamy vanilla custard and fresh strawberries. They are sweet, tangy, and delicious.
Ingredients
1 1/2 cups all-purpose flour
– 1/2 cup unsalted butter, chilled and cubed
– 1/4 cup granulated sugar
– 1 egg yolk
– 1/4 cup milk
– 1/2 cup heavy cream
– 1/2 cup granulated sugar
– 2 egg yolks
– 1 teaspoon vanilla extract
– 1 pint fresh strawberries, hulled and sliced
Instructions
In a large mixing bowl, combine the flour, butter, and sugar. Mix until the mixture resembles coarse crumbs.
- Add the egg yolk and milk and mix until the dough comes together.
- Roll out the dough on a floured surface and cut out circles to fit into a muffin tin.
- Bake the crusts in a preheated oven at 375°F for 10-12 minutes or until golden brown.
- In a saucepan, heat the heavy cream and sugar until the sugar dissolves.
- In a separate bowl, whisk the egg yolks and vanilla extract together.
- Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
- Pour the custard mixture into the baked crusts and top with sliced strawberries.
- Chill the tarts in the refrigerator for at least 1 hour before serving.
Notes
Make sure the butter is chilled before mixing it with the flour and sugar.
– Use a muffin tin to make the crusts uniform in size.
– Be careful not to overbake the crusts, as they can become too hard.
– Chill the custard mixture before pouring it into the crusts to prevent the crusts from becoming soggy.
