Description

Making this chicken burrito couldn’t be easier. In just 15 minutes, you can have a delightful lunch meal made with shredded chicken, cheddar cheese, and lettuce. Yes, the ingredients are quite simple, but the combination is delicious!


Ingredients

Units Scale

1 tbsp. vegetable oil

1 onion (finely chopped)

1 clove garlic (finely chopped)

3 c. shredded skinless cooked chicken (from a rotisserie chicken)

Salt, to taste

6 flour tortillas

3 c. shredded iceberg lettuce

3/4 c. tomato salsa

1 1/2 c. shredded cheddar


Instructions

  1. In a large skillet over medium-high heat, heat vegetable oil.
  2. Add chopped onion and cook for about 3 minutes or until softened.
  3. Add garlic and cook for 1 minute. Stir.
  4. Add chicken and salt. Cook until heated through, about 1 to 2 minutes.
  5. Place flour tortillas between 2 moistened paper towels and microwave on high for about 10 minutes to soften.
  6. Spoon some shredded lettuce onto each tortilla.
  7. Top each with chicken, salsa, and shredded Cheddar.
  8. Roll up burritos, cut in half, and serve.
