Description

These Almond Butter Energy Bars are a fantastic, nutritious snack. They’re packed with protein and fiber, and have a delightful sweetness from honey and a little bit of crunch from the oats and almonds. Perfect for a quick breakfast, a post-workout refuel, or an afternoon pick-me-up!


Ingredients

  • 2 cups oats
  • 1 cup almond butter
  • 1/2 cup honey or maple syrup
  • 1/2 cup chopped almonds
  • 1/2 cup dried fruit (cranberries, raisins, or chopped dates work well)
  • Optional: 1/4 cup mini dark chocolate chips


Instructions

  1. In a large bowl, combine the oats, almond butter, and honey or maple syrup. Stir until well combined.
  2. Mix in the chopped almonds and dried fruit. If using, add in the chocolate chips.
  3. Press the mixture into a parchment-lined baking dish, ensuring it’s packed in tightly and evenly.
  4. Pop the baking dish into the freezer for about 30 minutes to help the bars set.
  5. Once firm, remove from the freezer and cut into bars.
  6. Store the bars in an airtight container in the fridge. They’re now ready to be enjoyed as and when you need a quick and nutritious snack!

Notes

  • Warm the almond butter slightly before mixing. This will make it easier to combine with the other ingredients.
  • If your mixture is too dry, add a little more almond butter or honey. If it’s too wet, add more oats.
  • Feel free to customize your bars with different mix-ins like seeds, other nuts, or even protein powder.
