These Almond Butter Energy Bars are a fantastic, nutritious snack. They’re packed with protein and fiber, and have a delightful sweetness from honey and a little bit of crunch from the oats and almonds. Perfect for a quick breakfast, a post-workout refuel, or an afternoon pick-me-up!

- 2 cups oats
- 1 cup almond butter
- 1/2 cup honey or maple syrup
- 1/2 cup chopped almonds
- 1/2 cup dried fruit (cranberries, raisins, or chopped dates work well)
- Optional: 1/4 cup mini dark chocolate chips
Instructions
- In a large bowl, combine the oats, almond butter, and honey or maple syrup. Stir until well combined.
- Mix in the chopped almonds and dried fruit. If using, add in the chocolate chips.
- Press the mixture into a parchment-lined baking dish, ensuring it’s packed in tightly and evenly.
- Pop the baking dish into the freezer for about 30 minutes to help the bars set.
- Once firm, remove from the freezer and cut into bars.
- Store the bars in an airtight container in the fridge. They’re now ready to be enjoyed as and when you need a quick and nutritious snack!
Notes
- Warm the almond butter slightly before mixing. This will make it easier to combine with the other ingredients.
- If your mixture is too dry, add a little more almond butter or honey. If it’s too wet, add more oats.
- Feel free to customize your bars with different mix-ins like seeds, other nuts, or even protein powder.
