- 1 cup oat flour
- 1 ripe banana, mashed
- 1 egg
- 1/2 cup of milk (you can use almond milk for a dairy-free version)
- 1 tsp baking powder
- A pinch of salt
- Olive oil, for cooking
Instructions
- In a mixing bowl, combine the oat flour, baking powder, and salt. Stir to combine.
- In another bowl, mash the banana and add the egg and milk. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Don’t overmix; a few lumps are okay.
- Heat a drizzle of olive oil in your frying pan over medium heat.
- Pour 1/4 cup of batter for each pancake onto the pan. Cook until bubbles form on the surface, then flip using your spatula and cook for another 1-2 minutes until golden.
- Serve warm with your favourite healthy toppings.
Notes
- To make your own oat flour, simply blend oats in a blender until they reach a fine, flour-like consistency.
- For fluffier pancakes, don’t overmix the batter.
- Remember to adjust the heat as needed while cooking. If the pan gets too hot, the pancakes can burn.
