- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream (or a substitute)
- 1 cup grated Parmesan
- 3/4 pound spaghetti or pasta of choice
- Freshly chopped parsley, for garnish
Instructions
- Season chicken with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden and no longer pink, 8 minutes per side. Remove from skillet and set aside.
- In the same skillet, add garlic and cook until fragrant, about 1 minute.
- Add heavy cream and bring to a simmer, then stir in Parmesan.
- Meanwhile, in a large pot of salted boiling water, cook pasta according to package instructions until al dente. Save 1 cup of pasta water, then drain.
- Slice cooked chicken and add to skillet. Toss cooked pasta in the skillet until fully coated in sauce. If the pasta looks dry, add reserved pasta water a tablespoon at a time.
- Garnish with parsley before serving.
Notes
Remember to simmer your cream sauce gently and add in the cheese gradually to ensure it melts smoothly into the sauce. Overheating can cause the sauce to curdle.
